Sobrasada

Sobrassada is the island's sausage par excellence. It has a fine consistency and a very characteristic reddish colour due to the red paprika it is made with. Its texture and intensity of flavour can vary depending on the curing time it has undergone and the quality of the ingredients.

There are different types of sobrassada:
